The milk contains a protein called casein. This protein binds to the tannin from tea. The tannin from the tea can cause appearance of dark spots on your teeth and the casein from the milk prevents the formation of these dark spots.
Dr. Ava Chow from the School of Dental Medicine at the University of Alberta points out that adding milk to the tea is a cultural phenomenon and that this discovery will make people prepare their tea this way.
